Wheat Injera


Ingredients


  • 2.5 cups flour (half white, half whole wheat is good)
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 2 cups water

Directions


  1. Heat a frying pan on medium-high heat.
  2. Mix flour, baking powder, and salt in a bowl.
  3. Mix water in with dry ingredients. This makes a watery batter.
  4. Make each injera:
    1. Spread a very small amount of oil onto the pan, if required.
    2. Spoon enough batter onto the pan to coat it.
    3. Fry until the top has just set. Don't overcook, the bottom should not brown.
    4. Remove and roll into a cigar shape.

Eat with Shiro.
