Ingredients
- 1/3 lb medium-firm tofu
- 1 cup soy milk
- 1 cup unbleached white flour
- 1 tsp baking powder
- 1 tsp salt
- Oil
Directions
- Take 3x3 muffin tray, and put some oil (half a tablespoon or so) into the bottom of each hole. Put the tray in a 425 degree oven, and let the oil heat up for 5 minutes or so.
- Blend tofu and soy milk in a blender or food processor until smooth.
- In a mixing bowl, mix the flour, baking powder, and salt.
- Mix the wet and dry ingredients together.
- Take the tray out, and quickly but very carefully spoon the batter into the holes. The oil is hot and may spatter!
- Bake in the oven for 20 minutes or so, until the tops brown.
Makes 9 yorkshire puddings.
