Sweet Potato Biscuits
Ingredients
- 1 cup all-purpose flour
- 3 teaspoons baking powder
- 2 teaspoons honey or white sugar
- 1 teaspoon salt
- 2 tablespoons shortening
- 3/4 cup mashed roasted sweet potatoes
- 1/4 cup milk
Directions
- Preheat oven to 400.
- Combine dry ingredients.
- Cut in shortening.
- Add sweet potato and enough milk for desired wetness.
- Roll/flatten to about 1-2cm high and cut out biscuits using measuring cup, drinking glass, etc.
- Bake until golden brown, 12-15 minutes.

- Next time, might be interesting to brush tops with a small sauce of milk and honey or maple syrup for a light glaze. This would be done before they go into the oven.
