Sambucca Cream Sauce with Cranberries
Ingredients
- 1/4c Butter (2T)
- 4 Minced Garlic cloves (2)
- 1 yellow onion (1 small)
- 3 C Whipping Cream, milk, or Tayo (1.5c)
- 1/4c Sambuca (2T)
- 1/4c Orange juice concentrate (2T)
- 1/2c Parmesan (1/4c)
- 1/4Tsp. Nutmeg
- salt and pepper to taste
- 3oz. Frozen Cranberries (1.5oz)
- 1Lb. Fettuccine (1/2 lb)
- Whatever vegetables you want
- Chopped fresh parsley and grated orange rind for garnish
Directions
- In a large frying pan, heat butter and saute onion and garlic until onions are transparent.
- Add whipping cream, sambuca and orange juice to pan and stir well.
- Add parmesan, nutmeg, s&p, stirring until smooth. Simmer for about 5min.
- Add cranberries; simmer sauce.
- Cook the pasta.
- Fold sauce into pasta and garnish.
