Roasted Winter Vegetables
Ingredients
- 1/2 lb carrots cut into 1/4" slices
- 1/2 lb fennel cut into 1/4" slices
- 1 head garlic - cloves separated, peeled, left whole
- 1/2 lb onions cut into wedges
- 1/2 lb parsnips cut into 1/4" slices
- 1/2 lb potatoes cut into 1/4" slices
- 1/2 lb rutabaga cut into 1/4" slices
- 6 shallots, peeled and halved
- 1/2 lb sweet potatoes cut into wedges
- 1/2 lb winter squash cut into 1/4" slices

- 1/4 c olive oil
- 2 Tbsp Balsamic vinegar
- 1 Tbsp chopped fresh savoury
- 1 Tbsp chopped fresh thyme
- salt and pepper
Directions
- In a large bowl, toss veggies with oil, vinegar & herbs, salt and pepper.
- Transfer to a large greased baking pan.
- Roast @ 425 45 - 50 min or until tender and golden turning occasionally.
