Lentil Soup
Ingredients
- 1 carrot, diced
- 1 medium onion, diced
- 3 cloves garlic
- 2 tbsp wine (optional)
- 2 cups vegetable broth
- 2 cups water
- dash cardamom
- dash cinnamon
- pepper to taste
- salt to taste
- 1 cup masoor dal (red lentils)
Directions
- Saute carrot, onion, and garlic in a saucepan with margarine or oil until soft.
- Add remaining ingredients. Bring to a boil.
- Reduce heat and cover. Simmer until lentils are cooked (15-20 minutes).
