Hollandaise
Ingredients
- 3 egg yolks
- 2.5t lemon juice
- dash cayenne
- 1/4t salt
- 1/4t dijon mustard
- 1/3c butter
Directions
- Combine all but butter in a bowl and blend until smooth.
- Melt butter on medium-low until bubbling, but not burnt.
- Slowly poor melted butter into bowl while blending.
