Ingredients
- 3T butter or margarine
- 4 onions, sliced
- 4 garlic cloves, chopped
- 2 bay leaves
- 1C red wine
- 3T all-purpose flour
- 2L (8C) beef broth
- Slices of decent bread (baguette?)
- Gruyere or swiss cheese
Directions
To make the broth:
- Melt the butter in a large pot, add onions, garlic, bay leaves, salt, and pepper. Cook until onions are carmelized, about 30-45 minutes.
- Add wine, bring to a boil and reduce until the wine has evaporated.
- Remove bay leaves.
- Dust with the flour, cook for a few minutes.
- Season with salt and pepper.
To serve, fill bowls with broth, add slices of bread and cheese. Broil for a couple minutes and serve.
