Focaccia Bread
Ingredients
- 5 cups white flour (unbleached all-purpose works well)
- 2 tsp salt
- 2 cups warm water
- 2 1/4 tsp dry yeast
- 6 tbsp olive oil
- 1 tsp coarse salt
- Toppings (fresh rosemary, garlic, onions, cracked pepper, parsley)
Directions
- Measure flour and salt into a large bowl, mix.
- Pour in water, mix in yeast and 3 tbsp of the olive oil.
- Pour dough onto a clean surface, knead for a few minutes.
- Cover bowl and let rise until doubled (about an hour). Note: this step can be skipped if using instant yeast.
- Spread 1.5 tbsp oil onto a pan, scrape dough into the pan and out to the edges. A cookie sheet will work, or a pizza stone.
- Poke indentations on the top with fingertips, drizzle/coat with remaining 1.5 tbsp oil, sprinkle with coarse salt.
- Let rise until doubled. Put toppings on, lightly pressed into dough.
- Put into 450F pre-heated oven. Bake for 25 minutes or until golden brown.
