A nice savoury vegan cornbread.
Ingredients
- 2 cups cornmeal
- 1 cup unbleached all-purpose flour
- 2 teaspoon baking powder
- 1/3 cup canola oil
- 2 tablespoons maple syrup
- 2 cups soymilk
- 2 teaspoons apple cider vinegar
- 1/2 teaspoon salt
- 1/2c frozen corn
Optional Ingredients
- 2 chili peppers, diced
- 1/8c cheddar, diced
Directions
- Preheat oven to 350F if using a baking dish, and 400F if making muffins.
- Mix all ingredients into a bowl, and whisk or mix until smooth.
- Bake for 20-30 minutes
