These instructions are for a fairly bready bun. For a more gooey bun increase the butter and sugar
Ingredients
- 5 c white flour (unbleached all-purpose works well)
- 2 t salt
- 2 c warm water
- 2 1/4 tsp dry yeast
- 2 T sugar
- 3 T olive oil
Filling
- 1 c margarine or butter
- healthy 2t cinnamon
- 1/2t nutmeg
- 1/2c brown sugar
- pecans, soaked raisins (optional)
Icing
- 1 c cream cheese
- 1 c icing sugar
- 2 T margarine or butter
Directions
- Combine flour and salt in a big bowl and mix well.
- Combine water, yeast and sugar in a pitcher and mix well.
- Add water mixture and oil to flour mixture.
- Form into a ball, kneading for 1-2 minutes, and return to bowl. Drizzle with olive oil and place in warm oven for 10-20 minutes with a damp towel over top.
- Meanwhile, combine margarine with cinnamon and nutmeg.
- Break dough in half. Roll each half flat, into roughly the shape of a cookie sheet (about 1/2" thick).
- For each half, spread a generous amount of cinnamon-nutmeg margarine onto the dough (just less than half the mixture for each), reaching all the corners. Sprinkle dough with 1/4c sugar, and optional nuts/raisins.
- Roll up dough length-wise and slice into 1/2" pieces. Place on a silicone baking sheet.
- Melt remaining butter mixture (about 1/4c) and brush over tops of buns. If you want a sweeter bun, sprinkle with sugar. Allow to rise for about 20 minutes, or until doubled.
- Preheat oven to 350.
- Bake for about 15-20 minutes, or until golden. Ice once they are completely cooled.
