Chocolate Zucchini Walnut Loaf


Ingredients



  • 3 eggs
  • 1/2 c oil
  • 1/2c sour cream
  • 1.5c brown sugar
  • 2 c grated zucchini (next time I thought I might do more)
  • 2 t vanilla
  • 3 c flour
  • 3 t cinnamon
  • 1/8 t nutmeg
  • 1 t baking soda
  • 1/2 t baking powder
  • 1 t salt
  • 1 c walnuts
  • 1 cup dried cranberries, raisins and/or chocolate chips

Directions


  1. Preheat oven to 350. Grease your pans (two loaf pans or 24 muffins. I did a loaf and 12 muffins).
  2. Beat eggs in a medium sized bowl. Add oil, sour cream, sugar, and vanilla and mix well. Add zucchini.
  3. In a large bowl combine remaining ingredients and mix well. Add wet ingredients and stir to combine.
  4. Pour into well greased pans and bake (for muffins, consider that they rise a fair amount. Don't overfill). Muffins bake for 20-30 minutes, loaves for 50-60 minutes.

NB: Next time I would add ground walnuts to the top of the loaf before baking for extra deliciousness.
