Ingredients
- 3 eggs
- 1/2 c oil
- 1/2c sour cream
- 1.5c brown sugar
- 2 c grated zucchini (next time I thought I might do more)
- 2 t vanilla
- 3 c flour
- 3 t cinnamon
- 1/8 t nutmeg
- 1 t baking soda
- 1/2 t baking powder
- 1 t salt
- 1 c walnuts
- 1 cup dried cranberries, raisins and/or chocolate chips
Directions
- Preheat oven to 350. Grease your pans (two loaf pans or 24 muffins. I did a loaf and 12 muffins).
- Beat eggs in a medium sized bowl. Add oil, sour cream, sugar, and vanilla and mix well. Add zucchini.
- In a large bowl combine remaining ingredients and mix well. Add wet ingredients and stir to combine.
- Pour into well greased pans and bake (for muffins, consider that they rise a fair amount. Don't overfill). Muffins bake for 20-30 minutes, loaves for 50-60 minutes.
NB: Next time I would add ground walnuts to the top of the loaf before baking for extra deliciousness.
