Butternut Squash au Gratin
Ingredients
- 1 Butternut squash
- 1 onion, finely chopped
- 1/2 tsp salt
- 1/4 tsp pepper
- 2 tbsp margarine, melted
- 1 egg replacer
- 3/4 c soy milk
- 3/4 c shredded Swiss cheese
Directions
- Peel outer skin of squash with peeler or knife.
- Halve squash lengthwise and cut into thin slices.
- Place slices in oven-safe bowl with onion, salt, pepper and melted butter. Toss well. Bake, covered, at 375 degrees for 30 minutes.
- Beat egg replacer, milk and cheese.
- Remove cover from baking dish and pour cheese mixture evenly over squash.
- Bake until golden brown, about 20 minutes.
