Broccoli Soup
Ingredients
- 6 c broccoli
- 3 c mushrooms
- 1 onion
- 4 cloves garlic
- 4 c vegetable broth
- 2 c water
- 1 T oil
Directions
- Chop broccoli into flowerettes and 1/2inch stem pieces.
- Roughly chop mushrooms, onions, and garlic.
- In a large pot, saute onion and garlic in oil until translucent.
- Add rest of ingredients, and boil until broccoli is tender.
- Puree. Return to heat to thicken if necessary.
