Baja Baked Beans
Ingredients
- 4 cups black beans, soaked overnight
- 1/2 bunch cilantro, coarsely chopped (we never put this in because I hate cilantro)
- 1 T cumin seed
- 2 T pure chili powder
- 1 T oregano
- 6 garlic cloves, peeled and chopped
- 1 yellow onion, chopped
- 1 T salt
- 2 T chipotle puree
- 1/2 cup brown sugar, firmly packed
- 1 x 5.5 oz can tomato paste
- 1/3 c red wine vinegar (or balsamic)
Directions
- Put all ingredients up to and including onion into a pot and bring to a boil. Reduce head and simmer until beans are cooked (about an hour). Add 2 teaspoons of salt near the end.
- Preheat oven to 350.
- Add remaining ingredients into pot. Mix well, season to taste.
- Transfer beans to something that can go in the oven. Put a tray underneath to catch drippings.
- Bake in the oven for at least an hour. Recipe says to bake with lid on, but we always do it with the lid off so they're not as runny.
